1/2 pound macaroni noodles
3T(Tablespoon) butter
3T flour
1T powdered mustard
3 c milk
1/2 c onion, finely diced
1 bay leaf
1/2 t(teaspoon) paprika
1 large egg
12 oz. shredded sharp cheddar cheese
1 t salt
pepper
Topping: 3 T butter
1 c bread crumbs
Preheat oven to 350. Cook macaroni noodles. While pasta is cooking, in a separate pot, melt butter. Whisk in the four and mustard and keep it moving for 5 minutes, making sure it is free of lumps. Stir in milk, onion, bay leaf, and paprika. Simmer 10 minutes and remove bay leaf. Temper in the egg. Stir in 3/4 of cheese and salt & pepper. Fold the macaroni into the mix and pour into casserole dish. Top with remaining cheese. Melt butter and mix with bread crumbs. Top macaroni with crumbs and bake for 30 minutes. Let rest for 5 minutes before serving.
