1/2 cup diced red pepper
1/2 cup diced orange pepper
1/2 cup cut up Prosciutto
1/2 cup of Salami cut up into bite size pieces
1/2 cup diced up cherry tomatoes
1 to 1 1/2 cups of Arugula
1/4 cup of Capers (drained)
1 small can of sliced black olives
3 hard boiled eggs (diced up)
8 oz. of Mozzarella cheese diced up into small cubes
Sauce: Mix together:
1 cup of Mayo (I use the Kraft Mayo with Olive Oil) your choice
1 TBS of lemon juice
2 TBS of fresh Basil (blanched for 10 seconds before cutting up, prevents it from turning black)
Mix everything together and refrigerate or serve immediately. Best when refrigerated for a while to absorb the flavors.
