Grandma Harvey's Crook Neck (Summer) Squash

You must use FRESH Crooked Neck Yellow Squash.

Wash and clean four squash. Slice it in about 1/4 inch thick slices. In the wider part of the squash you might want to cut each slice in half. Place cut squash in a large sauce pan. Put about one inch of water in the bottom of the pan and cover with a lid. Cook on medium heat. Steam until Squash is very soft but not mushy. Add more water if the water starts to boil away from the bottom of the pan before the squash is soft.

Drain Squash if there is very much water and juice in the pan when it is cooked. Leave approximately 1/4 of a cup of the water on the squash.

IN THE SAUCE PAN ADD THE FOLLOWING INGREDIENTS TO THE SQUASH:

1/4 Can of Evaporated Milk – Do not dilute unless the dish tastes like can milk. Then you can add a little more water. You must use evaporated milk or this recipe will not turn out as good as Grandma’s. Do not use the sweetened evaporated can milk.

1 Tablespoon Butter or Margarine
Salt and Pepper to taste

After adding milk and additional ingredients bring Squash back just to a boil before serving.

GRANDMA AND I CUT THIS RECIPE IN HALF AND IT WAS PLENTY FOR TWO PEOPLE.
