CARMELS

1 Tbs plus 1 cup butter (divided)
2 cups sugar
1 3/4 cup light corn syrup
2 cups half and half cream
1 tsp vanilla
1 cup chopped pecans

Line 11 x 7 inch pan with foil, grease with the 1 tbl spoon of butter
bring to boil, butter, ,sugar and light corn syrup, over med heat. Stir constantly. Boil 4 min longer without stirring.

Remove from heat, Stir in half and half cream. Reduce heat to med-low cook to 238 degrees or (soft ball stage).stirring constantly

Remove from heat, stir in vanilla and nuts. Pour in greased pan to cool.
cut ing 1" pieces. You can wrap them in small pieces of saran wrap and twist each end like you do for taffee. surprizingly good.
